Cutting coils from a spring makes it more stiff, not the other way round. A longer spring of the same design will have less N/m.

yes there's a screw on the underside which holds on to the mirror. If you tighten that it will get the job done. You might have to remove the mirror stalk from the windshield of the bike to do this. There have been couple different designs, (depending on model and region).

Welcome Stuart! I weigh just 58 Kgs and I find the suspension is quite fine for me! I had troubles on the track though, with the front. But my track days are very few and far between. Feels just fine on some regular twisties! I use a Honda 110cc scooter to commute so I will not comment on that...

I would not do that. At the very minimum you should try to get fuel maps from someone using a similar setup maybe. Also tuning your system can be a rewarding activity!
