I'm in Atlanta, but the real good roads are up north in Suches and near the Blue Ridge Parkway. I've also heard there are a few good rides around Monticello, but I haven't been myself.
I'm guessing Chad (cjwell) will have some insights into this, as his race kit includes new cams but I'm not sure what their specs are. Best of luck and I look forward to hearing the outcome of this project.
It's going to be hard to get a smaller pipe without being too loud, although I think there's an akra system thats fairly short but sounds really good. Werkes is about as short as they get but the sound could be helped with the repack. There are some threads about that here.
New rear shock would be likely needed. I'm 5'10" and pushing 96kg, the rear Ohlins made a world of difference, plus racetech fronts. Stock shock isn't great for heavier guys.
I think a few guys have had over 12k km on theirs without any issues. Mine is at 8k with no issues yet, but it does sit in the back of my mind as to when my had gasket will go. Supporting mods such as SPAL fan, full samco hose kit, engine ice, header wrap, and pcv have been done to hopefully...
I think its a cool design and something very different than what most of us are used to seeing with our bikes. Much props to you for taking on the challenge oneup. I'm excited to see the finished bike.
